One thing you should know about me, I love sweets and pastries. Like in the kind of way that I’d probably marry them if I could. So this weekend I whipped up this little Cream Cheese Lemon deliciousness to share with you.
1 1/2 cups all-purpose flour
1 1/3 cups granulated sugar
1 tsp baking powder
Juice + zest of 2 lemons
Splash of milk
Two 9-inch cake tins
Preheat your oven to 350. Make sure to grease and flour your cake tins. I know you’re like but they’re non-stick. I just think it makes it easier to get them out so do whatever you want, they’re your cakes. Set those aside and get to the good stuff. I like to start with mixing my butter, sugar and eggs together first. Because I feel like those are kind of the best ingredients ever. Then add in your flour, baking soda, and lemon juice + zest. Once you mix that, just add a splash of milk. Your batter should pour easily, so if you feel like it’s too thick, just keep adding a little milk to thin it.
While those cool you can start your frosting. You can make enough to frost the whole cake or just do the top of the cake like I’ve done. Totally your preference, I’m just kind of into the look of only frosting the top.
1 to 2 ounces Cream Cheese
1/2 stick butter (room temp)
3/4 cup powdered sugar
Juice + zest 1 lemon
For your frosting, beat the cream cheese, sugar, butter, lemon juice, and zest together. You may have to add powdered sugar to your taste. The good thing about frosting is it doesn’t have to be exact to the recipe. Make it how you like it.
Use the lemon curd to put between cake layers. You can make this, but I just do store-bought. (gasp) I know. I’m only one woman, I can’t make everything.
Whew. That was some work. Now cut yourself off a slice and make a cup of coffee. If you live in STL or have someone who loves you in STL, bust out the Kaldi’s and you have the perfect Sunday afternoon. Then proceed to do nothing. You baked a damn cake, let someone else clean up. Unless you’re me and your roommate is a 10lb morkie. Then probably clean up, because you don’t want to be a Hoarders special.
