End of Summer Watermelon Margaritas

I’m so sad that summer is quickly coming to a close. I’m trying desperately to hang on to every last minute of it.

One of my favorite things about summer is fresh fruit. I know that’s surprising based on my non-diet lifestyle. But I love sweets and fruits qualify.

So I recently bought a whole watermelon at Trader Joe’s on a whim. I really attribute it to the fact it was 9 AM on a Saturday and I had just left barre class and hadn’t really eaten or had coffee. I was trolling the fruit section and was like “$3.99 for 5 watermelon spears! I can have a whole watermelon for $3.29!” Note, the realist in me was back in my comfy bed while my accounting degree apparently decided to wake up for once in 5 years.

So what the hell do you do when life gives you 2 gallon size ziplocs of watermelon? Make margaritas.

These are super easy to make and perfect for the last pool days of summer.

For 6 servings, pull together:

6(ish) cups of seedless watermelon

1 cup of tequila

1 tsp agave nectar

Juice of 2 Limes – you can use artificial lime juice, no one will judge you

Optional – 1/4 cup orange liquer

So when it comes to frozen drinks, I like to start with ice in my blender first.

Then toss everything else in on top of your ice.

Blend!

Once it’s really well blended, go ahead and pour yourself a drink, you’ve earned it!

Super simple to make and 100 million times better than drinking regular watermelon juice, am I right?
